How to Make Ara S Potato Oup
- Peel and dice 2 lbs russet potatoes. Chop 1 medium onion, 2 stalks celery, and 1 cup carrots.
- In a large pot, combine potatoes, onion, celery, and carrots. Add 6 cups water and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
- While vegetables simmer, prepare the creamy base. In a separate saucepan, melt 4 tbsp butter over low heat. Stir in 2 cans (10.75 oz each) cream of chicken soup, 1 can (10.75 oz) cream of celery soup, 2 cups milk, and 2 bouillon cubes. Heat through, stirring occasionally.
- Once vegetables are tender, carefully pour the creamy mixture into the pot with the potatoes. Stir to combine.
