How to Make Delightful Date Squares

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a small saucepan, bring 1/2 cup water to a boil. Reduce heat to medium, add 1 cup pitted Medjool dates and 1/2 teaspoon salt. Simmer until dates are very soft and easily mashed (about 5-7 minutes).
  3. Remove from heat and let cool slightly. Mash dates with a fork or potato masher until smooth.
  4. In a large bowl, whisk together 2 cups rolled oats, 1 cup flour, 3/4 cup sugar, 1/2 teaspoon salt, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1 teaspoon cinnamon.
  5. Add 1/2 cup softened vegan margarine and 1/4 cup vegetable oil. Mix until well combined.
  6. If the mixture is too dry, add 2-4 tablespoons of water, 1 tablespoon at a time, until desired consistency is reached.
  7. Press half of the oat mixture into the bottom of the prepared 9x13 inch pan.
  8. Spread the cooled date mixture evenly over the oat crust.
  9. Sprinkle the remaining oat mixture over the date layer.
  10. Bake for 25-40 minutes, or until the top is lightly golden brown and a toothpick inserted into the center comes out clean.
  11. Let cool completely in the pan before cutting into squares. The crust will firm up as it cools.
