How to Make Amaretti Stuffed Peaches

  1. Preheat oven to 350°F (175°C).
  2. Wash and halve 4 ripe peaches. Remove pits.
  3. Arrange peach halves cut-side up in a 7x11 inch baking dish.
  4. Spoon 1 teaspoon of red currant jelly into the hollow of each peach half.
  5. Gently crush 4 amaretti cookies. Spoon 1 teaspoon of crushed amaretti into each peach half, on top of the jelly.
  6. Cover the baking dish with aluminum foil.
  7. Bake for 25 minutes, or until peaches are tender. Check for doneness by gently inserting a fork or knife into a peach half.
  8. Remove from oven and let cool slightly before serving. Optional: Garnish with a sprig of fresh mint or a dusting of powdered sugar.
