How to Make Fantastic Apple Cranberry Apricot Matzoh Kugel

  1. Preheat oven to 350°F (175°C).
  2. Grease a 3-quart casserole dish.
  3. In a bowl, toss 4 medium apples, peeled and diced, with 1/3 cup packed light brown sugar and 1/4 cup fresh orange juice. Set aside.
  4. In another bowl, soak 6-8 matzah pieces in 1 cup warm water until softened but not mushy (about 5 minutes). Set aside.
  5. While matzah soaks, whisk 4 large eggs in a large bowl until light and frothy.
  6. Add 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1 1/2 cups granulated sugar, 1/2 cup (1 stick) melted unsalted butter, 1 cup dried cranberries, and 1/2 cup dried apricots (or cherries) to the egg mixture.
  7. Mix well to combine.
  8. Gently squeeze excess liquid from the softened matzah and add it to the egg mixture along with the apple mixture.
  9. Stir gently to combine.
  10. Pour the mixture into the prepared casserole dish.
  11. Sprinkle evenly with 2 tablespoons granulated sugar and dot the top with 2 tablespoons cold unsalted butter, cut into small pieces.
  12. Bake, covered with foil, for 40 minutes.
  13. Remove foil, and bake for another 20-25 minutes, or until golden brown and set.
  14. Let cool slightly before serving. Best served at room temperature (but we won't judge if you dig in while it's still warm!).
