How to Make Fantastic Yellow Squash Casserole

  1. Wash and dice 3 medium yellow squash into 1/2-inch pieces.
  2. Place diced squash in a large saucepan.
  3. Add 2 cups of water to the saucepan.
  4. Bring to a boil, then reduce heat and simmer for 10 minutes, or until squash is tender.
  5. Drain the squash thoroughly and set aside to cool slightly.
  6. While squash cooks, sauté 1 medium bell pepper (any color, diced) and 1/2 medium onion (diced) in a large skillet with 2 tablespoons of butter until softened, about 5-7 minutes.
  7. Add the cooked squash to the skillet with the sautéed vegetables. Stir in 1/2 cup packed light brown sugar, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  8. In a separate bowl, whisk together 3 large eggs and 1 cup of milk.
  9. Pour the egg mixture into the squash mixture and stir until well combined.
  10. Generously spray a 2-quart casserole dish with cooking spray.
  11. Pour the squash mixture into the prepared casserole dish.
  12. Bake in a preheated 325°F (160°C) oven for 30 minutes.
  13. Sprinkle 1 cup of breadcrumbs evenly over the top of the casserole.
  14. Continue baking for another 10-15 minutes, or until the breadcrumbs are golden brown and the casserole is heated through.
