How to Make Fresh Herb Sauce For Pasta
- Bring 6 quarts of water to a boil in a large pot. Add pasta and cook according to package directions.
- While pasta cooks, prepare the herb sauce: Combine 1/2 cup packed fresh basil, 1/4 cup packed fresh parsley, 2 cloves garlic, 1/4 small yellow onion, and the zest of 1 lemon on a cutting board.
- Finely chop the herbs, garlic, and onion until the garlic is about 1/4 inch in size.
- Heat 2 tablespoons of extra-virgin olive oil in a 12-inch skillet over medium-high heat.
- Add the herb mixture to the skillet. Reduce heat to medium and sauté for 5 minutes, or until lightly golden, seasoning with salt and freshly ground black pepper to taste. Be careful not to burn the garlic.
- Set the sauce aside while the pasta finishes cooking.
- Just before draining the pasta, reserve 2/3 cup of the pasta cooking water.
- Drain the pasta and add it to the skillet with the herb sauce.
- Stir in the reserved pasta water and toss over medium-low heat for 2 minutes, until the sauce is well combined and coats the pasta.
- Remove from heat and stir in 1/2 cup grated Parmesan cheese (or your favorite cheese).
- Serve immediately and enjoy!
