How to Make Fried Eggs In Tomatoes

  1. Preheat oven to 350°F (175°C).
  2. Wash 4 medium-sized tomatoes and carefully slice off a thin round piece from the top stem end of each.
  3. Gently scoop out the tomato pulp, reserving the tomato shells. Finely chop the pulp.
  4. Heat 2 tablespoons of olive oil in a medium frying pan over medium heat. Add the chopped tomato pulp, 1/4 cup chopped fresh parsley, 1 teaspoon sugar, salt and pepper to taste. Cook for 10 minutes, stirring occasionally, until softened.
  5. Fill each tomato shell halfway with the cooked tomato mixture.

  7. Bake for 15 minutes.
  8. Carefully crack one egg into each stuffed tomato.
  9. Bake for another 10-12 minutes, or until the egg whites are set and the yolks are cooked to your liking.
