How to Make Fudgy Chocolate Oatmeal Bars

  1. Preheat oven to 350°F (175°C). Grease and flour a 15 ½ x 10 ½ x 1-inch jelly-roll pan.
  2. In a large bowl, cream together 1 cup (2 sticks) softened butter and 1 ½ cups packed brown sugar until light and fluffy.
  3. Beat in 2 large eggs one at a time, then stir in 2 ½ teaspoons vanilla extract.
  4. In a separate bowl, whisk together 2 cups all-purpose flour and 1 teaspoon baking soda.
  5. Stir in 4 cups rolled oats.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In a medium saucepan, melt 2 tablespoons of the butter over low heat. Stir in 1 (14-ounce) can sweetened condensed milk and 2 cups semi-sweet chocolate chips until melted and smooth.
  8. Remove from heat and stir in ¾ cup sliced almonds and ½ teaspoon of the vanilla extract.
  9. Press 3 ⅓ cups of the oat mixture into the prepared pan.
  10. Spread the chocolate mixture evenly over the oat layer.
  11. Crumble the remaining oat mixture over the chocolate layer.
  12. Sprinkle with the remaining ½ cup sliced almonds.
  13. Bake for 25-30 minutes, or until the top is lightly golden brown and a toothpick inserted into the center comes out with moist crumbs.
  14. Let cool completely in the pan before cutting into 2 x 1-inch bars.
