- Quick Cooking Oats
- ½ cup apple juice
- ¼ cup vegetable oil

How to Make Apple Harvest Bake
- Preheat oven to 350°F (175°C).
- In a small bowl, combine 1 cup rolled oats, ½ cup apple juice, and ¼ cup vegetable oil. Let stand for 10 minutes.
- Stir in 2 large egg whites and 1 teaspoon vanilla extract.
- Lightly grease a 9-inch cake pan with cooking spray and spread 2 tablespoons of margarine in the bottom.
- Sprinkle ¼ cup packed light brown sugar evenly over the margarine.
- Arrange peeled and thinly sliced apples in a spoke-like pattern over the brown sugar, starting from the center and working outwards.
- In a separate bowl, lightly spoon 1 ½ cups all-purpose flour into dry measuring cups, then level with a knife.
- In a large bowl, whisk together ¾ cup packed light brown sugar, 1 ½ cups flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, and ¼ teaspoon salt.
- Add the oat mixture to the dry ingredients and stir gently just until moist. Do not overmix.
- Pour the batter into the prepared pan over the apples.
- Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10 minutes.
- Place a plate upside down on top of the cake and carefully invert onto the plate.
- Cut into 8 wedges and serve warm.
