  • ½ cup apple juice
  • ¼ cup vegetable oil
  • 2 large egg whites
  • Vanilla Extract
  • 2 tablespoons margarine
  • Cooking Spray
  • ¼ cup packed light brown sugar (for bottom) + ¾ cup packed light brown sugar (for batter)
  • Granny Smith Apple
  • All Purpose Flour
  • 1 teaspoon baking soda
  • Ground Cinnamon
  • ¼ teaspoon salt
  • Ground Nutmeg

How to Make Apple Harvest Bake

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine 1 cup rolled oats, ½ cup apple juice, and ¼ cup vegetable oil. Let stand for 10 minutes.
  3. Stir in 2 large egg whites and 1 teaspoon vanilla extract.
  4. Lightly grease a 9-inch cake pan with cooking spray and spread 2 tablespoons of margarine in the bottom.
  5. Sprinkle ¼ cup packed light brown sugar evenly over the margarine.
  6. Arrange peeled and thinly sliced apples in a spoke-like pattern over the brown sugar, starting from the center and working outwards.
  7. In a separate bowl, lightly spoon 1 ½ cups all-purpose flour into dry measuring cups, then level with a knife.
  8. In a large bowl, whisk together ¾ cup packed light brown sugar, 1 ½ cups flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, and ¼ teaspoon salt.
  9. Add the oat mixture to the dry ingredients and stir gently just until moist. Do not overmix.
  10. Pour the batter into the prepared pan over the apples.
  11. Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let cool in the pan for 10 minutes.
  13. Place a plate upside down on top of the cake and carefully invert onto the plate.
  14. Cut into 8 wedges and serve warm.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
