How to Make Gummy Bears
- In a medium saucepan, combine 1 cup granulated sugar, ½ cup light corn syrup, ¼ cup water, and 1 packet (2.25g) unflavored gelatin.
- Cook over medium-low heat, stirring constantly, until the sugar dissolves completely and the mixture comes to a gentle boil.
- Reduce heat to low and continue stirring until the mixture reaches 240°F (115°C) on a candy thermometer. This takes about 5-7 minutes; be patient and keep stirring!
- Remove from heat and carefully stir in 1 teaspoon of your choice of flavoring extract (vanilla, lemon, etc.) and a few drops of food coloring (optional).
- Immediately pour the mixture into silicone gummy bear molds. If using plastic molds, lightly grease them with cooking spray.
- Refrigerate for at least 2 hours, or until completely set.
- Once firm, gently pop the gummy bears out of the molds and enjoy!
