How to Make Happy Holiday Cider
- Preheat oven to 350°F (175°C).
- Insert about 10 cloves into each of 2 medium baking apples (about 20 cloves total).
- Place the apples in a 2-quart square baking dish.
- Add ½ cup of water to the baking dish.
- Bake apples, uncovered, for 15 minutes.
- Add 1 cup of crab apples (optional), to the baking dish.
- Bake an additional 25-30 minutes, or until apples and crab apples are tender.
- Remove from oven and let cool slightly.
- Halve or quarter the baked apples and set aside.
- Meanwhile, juice 2 large oranges and 1 large lemon (about 1 ½ cups of juice total).
- In a 4-quart Dutch oven, combine the orange and lemon juice, 4 cups apple cider, ¾ cup granulated sugar, 2 cinnamon sticks, the remaining cloves from step 2, 1 teaspoon ground allspice, and ½ teaspoon ground nutmeg.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat to low and simmer, uncovered, for 20 minutes.
- Use a slotted spoon to remove the cinnamon sticks and whole cloves from the cider mixture.
- To serve, place the prepared baked apples in a large, heat-proof punch bowl.
- Carefully pour the warm cider mixture over the apples.
