How to Make Healthy Whole Grain Granola Bars

  1. Preheat oven to 350°F (175°C). Line a 13x9 inch baking pan with foil, leaving an overhang on the sides for easy removal.
  2. In a large bowl, mash 3 ripe bananas with 1/2 cup packed light brown sugar and 1/4 cup Splenda until creamy.
  3. Add 2 large eggs and 1 teaspoon vanilla extract; beat until well combined.
  4. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in 3 cups Quaker Old Fashioned Oats, 2 cups Kashi 7 Whole Grains Puff Cereal, 1 cup raisins, and 1/2 cup dried cranberries. Mix well.
  7. Pour the mixture into the prepared baking pan and spread evenly.
  8. Bake for 27-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  9. Let the bars cool in the pan for 10 minutes before using the foil overhang to lift them out.
  10. Remove the foil and let the bars cool completely on a wire rack before cutting into 24 bars.
