How to Make Kumama's Jewish Apple Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 10-inch tube pan.
  2. In a medium bowl, gently toss the sliced apples with 2 teaspoons of cinnamon and 1/2 cup of sugar. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Add the remaining 1 cup of sugar, oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer until smooth.
  5. Stir in the applesauce until just combined.
  6. Pour half of the batter into the prepared tube pan.
  7. Layer half of the apple mixture over the batter.
  8. Pour the remaining batter over the apples, then top with the rest of the apple mixture.
  9. Sprinkle any remaining cinnamon-sugar mixture over the top.
  10. Bake for 1 hour and 20 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
