How to Make Lainie's Wahoo Marinade
- Preheat grill to high heat for 10 minutes. Lightly spray grill grates with nonstick cooking spray or brush with vegetable oil.
- In a blender, combine 1/4 cup olive oil, 1/4 cup lime juice, 2 cloves garlic (minced), 1 tablespoon chopped fresh cilantro, 1 tablespoon chopped fresh parsley, and 1/2 teaspoon salt.
- Blend until completely smooth and emulsified.
- Brush both sides of the wahoo fillets generously with the marinade. Let marinate for at least 15 minutes (longer is better!).
- Place marinated fillets on the preheated grill.
- Grill for 4-5 minutes per side, or until the fish flakes easily with a fork. Baste with additional marinade during grilling.
- Remove from grill and let rest for 2-3 minutes.
- Serve immediately with lemon wedges. Drizzle any remaining marinade over the fish and/or serve alongside the delicious pasta made with the leftover sauce!
- **Pasta Tip:** For the pasta, simply toss cooked angel hair pasta with the remaining marinade and garnish with parmesan cheese (optional).
