How to Make Lots Of Veggies Crock Pot Chicken Soup

  1. Place 1.5 lbs boneless, skinless chicken breasts in the bottom of your 6-quart crock-pot.
  2. Add 2 lbs Yukon gold potatoes, peeled and cubed, on top of the chicken.
  3. Add 1 large onion, chopped; 2 carrots, chopped; 2 celery stalks, chopped; and 1 cup chopped fresh green beans.
  4. Stir in 1 (10 oz) package frozen mixed vegetables (peas, corn, carrots, etc.)
  5. Add 4 cups chicken broth (or water + 4 bouillon cubes)
  6. Sprinkle 2 tsp dried thyme, 1 tsp dried rosemary, 1 tsp salt, 1/2 tsp black pepper, and 4 cloves minced garlic over the ingredients.
  7. Stir thoroughly to combine all ingredients.
  8. Cook on low for 6-7 hours, or until the chicken is cooked through and the vegetables are tender.
  9. Shred the chicken with two forks and stir back into the soup. Season to taste with additional salt and pepper if needed.
