- Place 1.5 lbs boneless, skinless chicken breasts in the bottom of your 6-quart crock-pot.
- Add 2 lbs Yukon gold potatoes, peeled and cubed, on top of the chicken.
- Add 1 large onion, chopped; 2 carrots, chopped; 2 celery stalks, chopped; and 1 cup chopped fresh green beans.
- Stir in 1 (10 oz) package frozen mixed vegetables (peas, corn, carrots, etc.)
- Add 4 cups chicken broth (or water + 4 bouillon cubes)
- Sprinkle 2 tsp dried thyme, 1 tsp dried rosemary, 1 tsp salt, 1/2 tsp black pepper, and 4 cloves minced garlic over the ingredients.
- Stir thoroughly to combine all ingredients.
- Cook on low for 6-7 hours, or until the chicken is cooked through and the vegetables are tender.
- Shred the chicken with two forks and stir back into the soup. Season to taste with additional salt and pepper if needed.
