How to Make Meaty Stuffed Manicotti

  1. Preheat oven to 350°F (175°C).
  2. Cook 1 pound manicotti pasta according to package directions until al dente. Rinse with cold water and drain thoroughly.
  3. Remove casings from 1 pound Italian sausage and discard. In a large skillet, brown the sausage and 1 pound ground beef over medium-high heat, breaking it up with a spoon, until no longer pink. Drain off any excess grease.
  4. In a large bowl, whisk together 2 large eggs and 1/2 cup milk.
  5. Add 1 (10-ounce) package of frozen chopped spinach, thawed and squeezed dry, 1 (15-ounce) container of ricotta cheese, 1/2 cup grated Parmesan cheese, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the egg mixture.
  6. Stir in the cooked sausage and beef mixture and 2 cups shredded mozzarella cheese.
  7. Spoon the filling into the manicotti shells. Arrange the filled shells in a lightly greased 13x9 inch baking dish.
  8. Pour 1 (24-ounce) jar of your favorite spaghetti sauce evenly over the manicotti.
  9. Bake, covered, for 30 minutes.
  10. Uncover and pour the remaining 1 (24-ounce) jar of spaghetti sauce over the manicotti.
  11. Sprinkle with 1/2 cup grated Parmesan cheese.
  12. Bake, uncovered, for an additional 10-15 minutes, or until the sauce is bubbly and the cheese is golden brown.
