How to Make Mock A Mole Low Fat Guacamole

  1. Thaw 1 cup frozen peas by running hot water over them in a strainer until bright green.
  2. Puree the thawed peas in a food processor until smooth.
  3. Add 1/4 of a medium avocado (about 1/2 cup mashed), 1/2 teaspoon salt, and the juice of 1 lemon or lime to the food processor.
  4. Puree again until smooth and creamy. Transfer to a medium bowl.
  5. Coarsely mash the remaining 3/4 of a medium avocado (about 1 1/2 cups mashed) with a fork. Stir in 1/4 cup finely chopped tomato and 2 tablespoons finely chopped onion.
  6. Gently fold the pea puree into the mashed avocado mixture. Taste and add more salt and/or lemon juice to your liking.
  7. Stir in 2 tablespoons chopped fresh cilantro. Serve immediately or chill for later.
