- Frozen Peas
- Hass Avocado
- 1/2 teaspoon salt (or to taste)

- 2 tablespoons finely chopped onion
- 2 tablespoons chopped fresh cilantro
How to Make Mock A Mole Low Fat Guacamole
- Thaw 1 cup frozen peas by running hot water over them in a strainer until bright green.
- Puree the thawed peas in a food processor until smooth.
- Add 1/4 of a medium avocado (about 1/2 cup mashed), 1/2 teaspoon salt, and the juice of 1 lemon or lime to the food processor.
- Puree again until smooth and creamy. Transfer to a medium bowl.
- Coarsely mash the remaining 3/4 of a medium avocado (about 1 1/2 cups mashed) with a fork. Stir in 1/4 cup finely chopped tomato and 2 tablespoons finely chopped onion.
- Gently fold the pea puree into the mashed avocado mixture. Taste and add more salt and/or lemon juice to your liking.
- Stir in 2 tablespoons chopped fresh cilantro. Serve immediately or chill for later.
