How to Make Mud Squares
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, combine 1 cup rolled oats and 1/2 cup margarine. Pour 1 cup boiling water over the mixture.
- Let stand for 10 minutes to soften the oats.
- Stir in 1 1/2 cups granulated sugar and 1/2 cup packed brown sugar.
- Add 2 large eggs and beat well.
- In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in 1 cup chocolate chips.
- Pour batter into the prepared pan.
- Sprinkle the remaining 1/2 cup chocolate chips and 1/2 cup chopped nuts (optional) over the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (don't overbake!).
- Let cool completely before cutting into squares. Serve with your favorite ice cream!
