How to Make Mushroom And Fried Egg Blt Clubs

  1. Cook bacon in a large nonstick skillet over medium heat, turning once, until crisp, about 4 minutes per side. Drain on paper towels.
  2. Wipe out the skillet. Melt 2 tablespoons butter with 1 tablespoon olive oil in the skillet.
  3. Add sliced mushrooms; season with salt and pepper. Cover and cook over medium heat until softened and liquid is released, about 7 minutes.
  4. Uncover and cook, stirring often, until mushrooms are richly browned, about 8 minutes more. Transfer mushrooms to a bowl.
  5. Wipe out the skillet; lightly coat with remaining 1 tablespoon olive oil.
  6. Crack eggs into the skillet and fry over easy over medium heat, about 3 minutes per side, or to your liking. Season with salt and pepper.
  7. Spread mayonnaise on 8 slices of whole wheat bread.
  8. Layer 4 slices of bread with lettuce, tomato, and bacon.
  9. Top with remaining 4 slices of bread.
  10. Top with mushrooms and fried eggs.
  11. Stack the sandwiches; cover with the remaining 4 slices of toast.
  12. Cut sandwiches in half and serve with pickles and chips, if desired.
