How to Make Parmentier French Style Potato Salad

  1. Rinse 1 cup of green lentils and place them in a wok or large pot of boiling water. Cook rapidly for 10 minutes.
  2. Reduce heat and simmer for a further 10 minutes until lentils are tender but not mushy. Drain and rinse under cold water.
