How to Make Parmentier French Style Potato Salad
- Rinse 1 cup of green lentils and place them in a wok or large pot of boiling water. Cook rapidly for 10 minutes.
- Reduce heat and simmer for a further 10 minutes until lentils are tender but not mushy. Drain and rinse under cold water.
- While lentils cook, peel and cut 1.5 lbs potatoes into bite-sized pieces. Heat 2 tablespoons of olive oil in a large frying pan or wok over medium-high heat.
- Add the potatoes and stir-fry for 3-4 minutes until slightly softened.
- Add 1 medium red onion (cut into 8 wedges) and 2 cloves of minced garlic to the pan. Stir-fry for another 3-4 minutes until onion is softened.
- Add 1 teaspoon of mustard seeds to the pan and stir continuously until they stop popping (about 1 minute).
- Add the cooked lentils to the pan and mix well to combine.
- Remove the pan from the heat and transfer the potato and lentil mixture to a serving dish. Allow to cool slightly.
- To make the dressing, whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon lemon juice, and 1 tablespoon chopped fresh coriander in a small jug.
- Season the dressing generously with salt and pepper to taste.
- Pour the dressing over the cooled potato and lentil mixture. Toss gently to coat.
- Serve immediately or chill for later. Enjoy!
