How to Make Rice Cereal Energy Bars

  1. Preheat oven to 350°F (175°C). Line a 10x15 inch jellyroll pan with parchment paper and grease lightly.
  2. In a dry skillet over medium heat, toast sesame seeds and sunflower seeds, stirring frequently, until fragrant (about 3-5 minutes). Remove from heat and let cool slightly.
  3. Lightly salt the toasted seeds.
  4. In a food processor, combine chopped dates, raisins, apricots, cherries, and chocolate chips. Pulse until finely chopped but not pasty.
  5. In a large bowl, combine the oat, crisp rice cereal and the date mixture.
  6. In a microwave-safe bowl, combine corn syrup, sugar, and peanut butter. Microwave in 30-second intervals, stirring after each, until melted and smooth (about 1-2 minutes).
  7. Stir in powdered milk, vanilla extract, and almond extract into the melted peanut butter mixture.
  8. Pour the peanut butter mixture over the cereal mixture and stir well to combine until evenly coated.
  9. Press the mixture firmly into the prepared jellyroll pan using wet hands.
  10. Refrigerate for at least 2 hours, or preferably overnight, to firm up.
  11. Cut into squares and wrap individually in parchment paper or plastic wrap. Store in the freezer for up to 3 months.
