How to Make Seven Layer Cookies

  1. Preheat oven to 350°F (175°C). Grease and flour a 12x18 inch baking pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the almond extract.
  4. Gradually add the flour and baking powder, mixing until just combined.
  5. Divide the dough into three equal portions.
  6. Tint one portion of dough red, one yellow, and one green using food coloring.
  7. Spread the red dough evenly into the prepared pan.
  8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. Carefully remove the pan from the oven. Place a sheet of parchment paper over the baked layer and flip it onto a wire rack or flat surface.
  10. Spread half of the preserves evenly over the red layer.
  11. Spread the yellow dough over the preserve layer.
  12. Bake for another 10-12 minutes.
  13. Remove from oven, place parchment paper over the baked layer and flip onto the red layer.
  14. Spread the remaining preserves evenly over the yellow layer.
  15. Spread the green dough evenly over the preserve layer.
  16. Bake for 10-12 minutes, or until set.
  17. Remove from oven, place parchment paper over the baked layer and flip onto the yellow layer.
  18. In a double boiler or microwave, melt the chocolate chips. Let cool slightly.
  19. Spread the melted chocolate evenly over the top layer of the cookies.
  20. Refrigerate for at least 30 minutes, or until the chocolate is firm.
  21. Once firm, carefully flip the cookies onto a cutting board, and spread the remaining chocolate over the sides and bottom.
  22. Sprinkle the top generously with sprinkles.
  23. Refrigerate for another 30 minutes to allow the sprinkles to set.
  24. Use a sharp, hot knife to cut into squares and serve. Enjoy!
