Ingredients for Apricot Balsamic Glazed And Grilled Chicken

  • Apple Juice
  • 1/4 cup peach preserves (or apricot preserves)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 large chicken breast halves (paillard-cut)
  • Salt & Pepper

How to Make Apricot Balsamic Glazed And Grilled Chicken

  1. In a small bowl, whisk together 1/4 cup peach preserves (or apricot preserves), 2 tablespoons balsamic vinegar, 1 tablespoon olive oil, 1 teaspoon Dijon mustard, and 1/2 teaspoon garlic powder.
  2. Place chicken breasts between two sheets of plastic wrap and pound to 1/4-inch thickness (paillard style).
  3. Place chicken in a shallow dish and pour glaze over chicken, ensuring both sides are coated. Marinate for at least 15 minutes (longer is better!).
  4. Preheat grill to medium-high heat.
  5. Grill chicken for 4-5 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  6. Baste chicken with remaining glaze during the last 2 minutes of grilling.
  7. Remove from grill and let rest for 2-3 minutes before serving. Enjoy!

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
