How to Make Spelt Muffins

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together 2 cups spelt flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, and ½ cup granulated sugar.
  3. In a separate bowl, mash 1 ripe banana (optional). Add 1 large egg, ¼ cup unsweetened applesauce or yogurt, 1 teaspoon vanilla extract, 2 tablespoons honey, and ½ cup buttermilk to the mashed banana. Whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
  5. Stir in 1 cup of your favorite fruit and/or nuts (see suggestions in description).
  6. Fill each muffin cup ¾ full.
  7. Sprinkle the tops of the muffins with 1 tablespoon flaxseed meal (optional).
  8. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
