How to Make Stir Fried Prawns With Leeks

  1. Peel and devein 1 pound of prawns, leaving the tails intact.
  2. Rinse 2 medium leeks thoroughly under cold water.
  3. Cut the leeks into 1 1/2-inch lengths, then slice lengthwise into fine shreds.
  4. Slit open 1-2 red chilies (adjust to your spice preference), remove and discard the seeds, and finely shred the flesh.
  5. Finely shred 1 tablespoon of fresh ginger.
  6. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Stir-fry the prawns in batches until they turn pink (about 2-3 minutes per batch), ensuring not to overcrowd the pan.
  7. Remove the prawns from the wok and set aside.
  8. Add another 1 tablespoon of vegetable oil to the wok. Stir-fry the leeks, chili, and ginger for 40 seconds over high heat. Push the mixture to one side of the wok.
  9. Return the prawns to the wok and stir-fry for 1 1/2 minutes, or until cooked through.
  10. Add 2 tablespoons of soy sauce and 1 tablespoon of mirin to the wok.
  11. In a small bowl, whisk together 2 tablespoons of chicken broth and 1 tablespoon of cornstarch until smooth.
  12. Pour the cornstarch mixture into the wok. Cook over high heat, stirring constantly, until the sauce thickens (about 1 minute).
  13. Serve immediately over steamed rice or noodles.
