How to Make Sunny Buns

  1. Preheat oven to 400°F (200°C).
  2. Slice the top of each bun and carefully scoop out the inside to create a hollow bun, leaving a 1/4-inch wall.
  3. Spread 1/2 tablespoon of ketchup inside each hollowed bun.
  4. Lightly butter the edges and sides of all the buns.
  5. In a medium skillet, melt 1 1/2 tablespoons of butter over medium heat. Add the chopped onions and saute until softened, about 5 minutes.
  6. Add the diced carrots and frozen peas to the skillet. Cook for 2-3 minutes, until heated through.

  11. Bake in the preheated oven for 10-12 minutes, or until the egg whites are set, the cheese is melted and bubbly, and the buns are lightly golden and crisp.
