How to Make Sunny Buns
- Preheat oven to 400°F (200°C).
- Slice the top of each bun and carefully scoop out the inside to create a hollow bun, leaving a 1/4-inch wall.
- Spread 1/2 tablespoon of ketchup inside each hollowed bun.
- Lightly butter the edges and sides of all the buns.
- In a medium skillet, melt 1 1/2 tablespoons of butter over medium heat. Add the chopped onions and saute until softened, about 5 minutes.
- Add the diced carrots and frozen peas to the skillet. Cook for 2-3 minutes, until heated through.
- Remove from heat and season with salt and pepper to taste.
- Spoon the carrot-pea-onion mixture evenly into the hollowed buns.
- Crack one egg into each prepared bun, on top of the veggie mixture.
- Sprinkle each bun generously with shredded cheese.
- Bake in the preheated oven for 10-12 minutes, or until the egg whites are set, the cheese is melted and bubbly, and the buns are lightly golden and crisp.
