How to Make Sunny Buns

  1. Preheat oven to 400°F (200°C).
  2. Slice the top of each bun and carefully scoop out the inside to create a hollow bun, leaving a 1/4-inch wall.
  3. Spread 1/2 tablespoon of ketchup inside each hollowed bun.
  4. Lightly butter the edges and sides of all the buns.
  5. In a medium skillet, melt 1 1/2 tablespoons of butter over medium heat. Add the chopped onions and saute until softened, about 5 minutes.
  6. Add the diced carrots and frozen peas to the skillet. Cook for 2-3 minutes, until heated through.
  7. Remove from heat and season with salt and pepper to taste.
  8. Spoon the carrot-pea-onion mixture evenly into the hollowed buns.
  9. Crack one egg into each prepared bun, on top of the veggie mixture.
  10. Sprinkle each bun generously with shredded cheese.
  11. Bake in the preheated oven for 10-12 minutes, or until the egg whites are set, the cheese is melted and bubbly, and the buns are lightly golden and crisp.
