How to Make Thai One Pot

  1. Heat 1 tablespoon of vegetable oil in a large nonstick frying pan over moderately high heat.
  2. Add 1 bell pepper (any color, chopped), 8 ounces shiitake mushrooms (sliced), and 1 teaspoon salt. Cook, stirring occasionally, until the vegetables begin to brown, about 5 minutes.
  3. Remove the vegetables from the pan and set aside.
  4. Add 1 pound pork (thinly sliced or ground) to the pan and cook, stirring, until no longer pink, about 3 minutes.
  5. Spoon off any excess fat from the pan.
  6. Return the bell peppers and shiitake mushrooms to the pan. Add 1 ½ cups long-grain rice, 2 cups chicken or vegetable broth, 2 tablespoons soy sauce, ½ teaspoon salt, and ¼ teaspoon cayenne pepper (or to taste).
  7. Bring the mixture to a simmer.
