How to Make Thai One Pot
- Heat 1 tablespoon of vegetable oil in a large nonstick frying pan over moderately high heat.
- Add 1 bell pepper (any color, chopped), 8 ounces shiitake mushrooms (sliced), and 1 teaspoon salt. Cook, stirring occasionally, until the vegetables begin to brown, about 5 minutes.
- Remove the vegetables from the pan and set aside.
- Add 1 pound pork (thinly sliced or ground) to the pan and cook, stirring, until no longer pink, about 3 minutes.
- Spoon off any excess fat from the pan.
- Return the bell peppers and shiitake mushrooms to the pan. Add 1 ½ cups long-grain rice, 2 cups chicken or vegetable broth, 2 tablespoons soy sauce, ½ teaspoon salt, and ¼ teaspoon cayenne pepper (or to taste).
- Bring the mixture to a simmer.
- Cover the pan, reduce heat to low, and simmer for 20 minutes, or until the rice is cooked through and the liquid is absorbed. Do not lift the lid during simmering.
- Remove from heat and let stand, covered, for 10 minutes.
- Stir in 2 scallions (thinly sliced), ½ cup radishes (thinly sliced) or 1 cup bean sprouts, ¼ cup chopped cilantro, and the juice of 1 lime.
