How to Make Apple Stuffed Pork Loin Chops
- Preheat oven to 350°F (175°C).
- Lightly spray a 9x13 inch baking pan with vegetable oil cooking spray.
- Trim all visible fat from the pork chops.
- Cut each pork chop in half horizontally to create thinner, more evenly cooking chops.
- Carefully cut a pocket into the side of each pork chop half, being careful not to cut all the way through.
- In a medium mixing bowl, combine the following ingredients: 1 medium apple (peeled, cored, and diced), 1/4 cup chopped onion, 1/4 cup dried cranberries, 2 tablespoons chopped walnuts, 1 tablespoon olive oil, 1 teaspoon sage, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 cup chicken broth.
- Stuff approximately 1/3 cup of the apple mixture into each pork chop pocket.
- Arrange the stuffed pork chops in the prepared baking pan.
- Sprinkle generously with 1 tablespoon fresh rosemary, chopped.
- Bake uncovered for 40-50 minutes, or until a meat thermometer inserted into the thickest part registers 145°F (63°C). Let rest for 5-10 minutes before serving.
