How to Make Tyropita Cheese Pies

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mash 8 ounces (225g) feta cheese with a fork. Add 4 ounces (115g) crumbled kefalograviera cheese, 1/4 cup (60ml) milk, 2 tablespoons (30g) melted butter, 2 tablespoons chopped fresh dill, 2 large eggs, and salt and pepper to taste. Mix well to combine.
  3. Lightly grease a 9x13 inch baking pan with 2 tablespoons (30g) margarine.
  4. Lay half of a package (approximately 10-12 sheets) of phyllo pastry in the bottom of the prepared pan, overlapping sheets as needed. Brush each layer with melted margarine.
  5. Pour the cheese mixture evenly over the phyllo.
  6. Top with the remaining phyllo sheets, again brushing each layer with melted margarine.
  7. Cut the Tyropita into squares before baking (this makes serving easier).
  8. Bake for 60-75 minutes, or until the phyllo is golden brown and the cheese is bubbly and lightly browned. Let cool slightly before serving.
