How to Make Vegan Breakfast Casserole

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.

  9. In a large bowl, combine 1 block (14 oz) firm or extra-firm tofu (crumbled), 1 cup soy milk, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon garlic powder, and 1/4 teaspoon onion powder. Mix well.
  10. Add the cooked vegetables and sausage to the tofu mixture and stir to combine.
  11. Pour the tofu mixture evenly over the bread in the baking dish. Let it sit for 20 minutes to allow the bread to absorb the liquid.
