  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add 1/2 cup chopped onion and 2 cloves minced garlic to the skillet. Cook until softened, about 5 minutes.
  3. Add 1 cup vegan sausage crumbles to the skillet and cook, breaking it up with a spoon, until browned. Approximately 8-10 minutes.
  4. Stir in 1 bell pepper (any color), chopped, and cook until softened, about 3-5 minutes.
  5. Remove the skillet from the heat and set aside.
  6. Grease a 9x13 inch glass baking dish with cooking spray or oil.
  7. Spread 6 cups cubed bread (day-old bread works best) evenly in the prepared baking dish.
  8. Preheat oven to 350°F (175°C).
  9. In a large bowl, combine 1 block (14 oz) firm or extra-firm tofu (crumbled), 1 cup soy milk, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon garlic powder, and 1/4 teaspoon onion powder. Mix well.
  10. Add the cooked vegetables and sausage to the tofu mixture and stir to combine.
  11. Pour the tofu mixture evenly over the bread in the baking dish. Let it sit for 20 minutes to allow the bread to absorb the liquid.

  13. While the casserole is baking, prepare the potatoes. Bake 1 medium russet potato until soft, approximately 60 minutes. Peel, grate, and saute in a pan with 1 tablespoon of vegetable oil until lightly browned. Layer the fried potatoes on top of the casserole during the last 15 minutes of baking.
  14. Let cool slightly before serving. Enjoy plain or with your favorite gravy!
