How to Make Weight Watchers Butter Chicken

  1. Lightly spray a 20cm (8-inch) saucepan with cooking spray and heat over medium-high heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Cook, stirring frequently, for 3 minutes, or until softened.
  3. Add the chicken pieces and cook, stirring occasionally, for 3-4 minutes, or until the chicken is lightly browned.
  4. Stir in the garam masala, cumin, coriander, cinnamon stick, and chili powder. Cook for 1 minute, or until fragrant.
  5. Add the diced tomatoes (undrained), passata, and 1 cup of water. Bring to a boil.
  6. Reduce heat to medium-low, cover, and simmer for 20 minutes, or until the sauce has slightly thickened.
  7. Reduce heat to low. Stir in the light cream (or coconut milk) and spinach. Cook for 1 minute, or until the spinach has wilted.
  8. Remove and discard the cinnamon stick.
  9. Serve the butter chicken hot over cooked basmati rice, accompanied by steamed broccoli and cauliflower.
