How to Make Green Split Pea Curry Soup
- Rinse 1 cup of dried green split peas thoroughly under cold water.
- Heat 6 cups of water in a kettle until boiling.
- Chop 1 large onion, 2 carrots, and 2 celery stalks into 1/2-inch pieces.
- Mince 4 cloves of garlic.
- In your slow cooker, combine the rinsed split peas, boiling water, chopped onion, carrots, celery, and minced garlic.
- Stir in 1 tablespoon of curry powder, 1 teaspoon of turmeric, 1/2 teaspoon of cumin, 1/4 teaspoon of cayenne pepper (optional), 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Add the juice of 1/2 lemon.
- Cover and cook on high for 6 1/2 hours, or on low for 12-14 hours, or until the split peas are tender and the soup has thickened to your desired consistency. Stir occasionally and add more water or broth if needed.
- Before serving, taste and adjust seasoning as needed. You may want to add more salt, pepper, or lemon juice to your liking.
