How to Make 3 Cheese Bean Dip
- Combine 1 (15-ounce) can of drained and rinsed kidney beans, 1 (4-ounce) can of diced green chiles (drained), 1 cup shredded cheddar cheese, 1/2 cup shredded Monterey Jack cheese, 1/4 cup shredded pepper jack cheese, 1/4 cup chopped green onions, 2 tablespoons mayonnaise, and 1 teaspoon chili powder in a food processor.
- Process until smooth, scraping down the sides as needed. Add a tablespoon or two of milk or water if needed to achieve desired consistency.
- Transfer the mixture to a microwave-safe bowl.
- Microwave on high for 2-3 minutes, or until the cheese is melted and the dip is heated through. Stir well.
- Taste and adjust seasonings as needed. Add more chili powder for extra heat, or a pinch of salt and pepper to balance the flavors.
