How to Make 4 Hour Beef Stew
- Preheat oven to 250°F (120°C).
- In a 9x13 inch baking dish, place 2 lbs beef stew meat.
- Roughly chop 2 large carrots, 2 celery stalks, and 1 large onion. Spread evenly over the beef.
- In a small bowl, whisk together 2 tablespoons brown sugar, 1 teaspoon salt, and 2 tablespoons tapioca starch.
- Sprinkle the sugar, salt, and tapioca mixture evenly over the meat and vegetables.
- In another small bowl, whisk together 1 (46 ounce) can V8 juice and 1/2 cup ketchup.
- Pour the V8 and ketchup mixture over everything in the baking dish.
- Cover the baking dish tightly with aluminum foil. Do not lift the foil during cooking!
- Bake for 4-5 hours, or until the beef is incredibly tender.
- If using a slow cooker: Combine all ingredients in your slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot with crusty bread.
