How to Make 4 Step Chicken Rustic Lemon Onion Chicken

  1. Season 4 boneless, skinless chicken breasts (about 1.5 lbs total) with 1 tsp dried thyme, 1 tsp salt, and ½ tsp black pepper.
  2. Heat 2 tbsp olive oil in a large sauté pan over medium heat.
  3. Dredge chicken breasts in ½ cup all-purpose flour, ensuring they are evenly coated. Add to the hot oil and sauté for 5-7 minutes per side, or until cooked through and golden brown.
  4. Remove chicken from pan and set aside on a plate tented with foil to rest.
  5. Add 1 large onion, thinly sliced, and 2 sprigs fresh thyme to the same sauté pan. Cook over low heat for 5-7 minutes, until softened and fragrant.
  6. In a measuring cup, whisk together ½ cup dry white wine (optional), 1 cup chicken broth, and the juice of 1 large lemon.
  7. Increase heat to high. Pour the wine/broth/lemon mixture into the pan and deglaze, scraping up any browned bits from the bottom of the pan. Simmer until the sauce slightly reduces, about 2-3 minutes.
