How to Make 4 Step Chicken Rustic Lemon Onion Chicken
- Season 4 boneless, skinless chicken breasts (about 1.5 lbs total) with 1 tsp dried thyme, 1 tsp salt, and ½ tsp black pepper.
- Heat 2 tbsp olive oil in a large sauté pan over medium heat.
- Dredge chicken breasts in ½ cup all-purpose flour, ensuring they are evenly coated. Add to the hot oil and sauté for 5-7 minutes per side, or until cooked through and golden brown.
- Remove chicken from pan and set aside on a plate tented with foil to rest.
- Add 1 large onion, thinly sliced, and 2 sprigs fresh thyme to the same sauté pan. Cook over low heat for 5-7 minutes, until softened and fragrant.
- In a measuring cup, whisk together ½ cup dry white wine (optional), 1 cup chicken broth, and the juice of 1 large lemon.
- Increase heat to high. Pour the wine/broth/lemon mixture into the pan and deglaze, scraping up any browned bits from the bottom of the pan. Simmer until the sauce slightly reduces, about 2-3 minutes.
- Remove from heat and stir in 2 tbsp butter until melted and incorporated, creating a creamy sauce.
- Season the sauce with salt and pepper to taste.
- Place the rested chicken on a serving platter.
- Spoon the delicious lemon-onion sauce generously over the chicken and serve immediately.
