- Preheat oven to 375°F (190°C).
- Spray 8 muffin tins generously with vegetable spray.
- Thinly slice 2 medium russet potatoes (about 2 cups sliced).
- Finely chop 1/2 cup yellow onion.
- Layer potato slices, 1/4 cup shredded cheddar cheese, and 1/8 cup chopped onion in each muffin cup, repeating layers until cups are almost full (about 3 layers).
- Season each gratin generously with salt and freshly ground black pepper.
- Top each gratin with 1-2 tablespoons heavy cream.
- Cover muffin tin with aluminum foil.
- Bake for 30 minutes.
- Remove foil and bake for another 15-20 minutes, or until potatoes are tender and golden brown.
- Let cool slightly before inverting gratins onto a plate to serve.
