How to Make Almonds Mushrooms Raisins And Red Pepper Pilaf
- Melt 1 tablespoon of butter in a large saucepan over medium-high heat. Add 8 ounces of sliced mushrooms and sauté for 3-4 minutes, until softened. Remove mushrooms from the pan and set aside.
- Add 1 tablespoon of butter to the same saucepan. Add 1 medium onion, chopped, and 1 red bell pepper, chopped, and sauté for 5-7 minutes, until softened and slightly caramelized.
- Stir in 1 teaspoon of salt, 1/2 teaspoon of dried thyme, 1 cup of long-grain rice, and 2 cups of chicken or vegetable broth.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until all the liquid is absorbed and the rice is cooked through.
- Remove from heat and gently stir in the reserved mushrooms, 1/2 cup of slivered almonds, and 1/4 cup of raisins.
- Fluff the pilaf with a fork, pour into a serving dish, season with freshly ground black pepper to taste, and garnish with 2 tablespoons of finely chopped green onions.
