How to Make Amazing Chicken Tortilla Soup

  1. Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Sauté 1 medium onion (chopped), 2 cloves garlic (minced), 1 jalapeño pepper (seeded and minced, or use more/less to adjust spice), and 1 green bell pepper (chopped) until softened, about 5-7 minutes.
  2. Add 4 cups chicken broth, 1 (14.5 ounce) can diced tomatoes (undrained), 1 (15 ounce) can corn (drained), 1 teaspoon cumin, 1/2 teaspoon chili powder, 1/4 teaspoon cayenne pepper (optional), 1 teaspoon salt, and 1/2 teaspoon black pepper to the pot. Stir in 2 cups cooked chicken breast (shredded or cut into bite-sized pieces).
  3. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes. If using uncooked chicken breasts (about 1.5 lbs), add them now and simmer until cooked through (about 20-25 minutes).
  4. Remove the chicken from the soup (if using uncooked chicken breasts). Shred the cooked chicken and return it to the pot. Simmer for an additional 15 minutes to allow the flavors to meld.
