How to Make Anytime Cheesy Potatoes
- Preheat oven to 350°F (175°C).
- In a large bowl, combine 4 cups frozen shredded hash browns, 1/2 cup (1 stick) melted butter, 1 (10.75 ounce) can condensed cheddar cheese soup, 1/2 cup sour cream, 1/2 cup chopped onion, 1 cup shredded cheddar cheese, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Pour the mixture into a greased 3-quart casserole dish.
- In a separate bowl, combine 1 cup crushed corn flakes and 1/4 cup (1/2 stick) melted butter. Sprinkle evenly over the top of the casserole.
- For oven baking: Cover the casserole dish and bake for 45 minutes. Remove the cover and bake for an additional 10 minutes, or until golden brown and bubbly.
- For crockpot cooking: Transfer the mixture to a greased slow cooker. Cook on high for 3-4 hours or on low for 7-8 hours. During the last 30 minutes of cooking, sprinkle with the crushed corn flake topping and cook uncovered.
