How to Make Apple And Cinnamon Muffins Vegan
- Preheat oven to 375°F (190°C). Line a muffin tin with 5 paper liners.
- In a large bowl, whisk together the wet ingredients: 1 cup unsweetened applesauce, 1/2 cup plant-based milk (almond, soy, or oat), 1/4 cup maple syrup (or agave nectar), 2 tbsp melted vegan butter (or oil), 1 tsp vanilla extract.
- In a separate bowl, whisk together the dry ingredients: 1 1/2 cups all-purpose flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp ground cinnamon, 1/4 tsp ground nutmeg, 1/4 tsp salt.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Gently fold in 1 cup chopped apples (peeled and cored) and 1/2 cup chopped walnuts (optional).
