  • 2 tablespoons brown sugar
  • 2 tablespoons water
  • Nonfat Milk
  • 1 vanilla bean

How to Make Apple Bread Pudding Diabetic

  1. Preheat oven to 160°C (320°F).
  2. Grease a deep 1.5-litre (6-cup) baking dish.
  3. Peel, core, and quarter 4-5 medium apples (about 1kg). Slice each quarter into 3mm thick slices.
  4. In a medium frying pan, dissolve 2 tablespoons brown sugar in 2 tablespoons water over low heat. Add the apple slices.
  5. Simmer uncovered for about 5 minutes, or until tender, stirring occasionally.
  6. In a medium saucepan, combine 500ml milk and 1 vanilla bean, split and scraped.
  7. Bring to a boil, then remove from heat. Cover and let stand for 5 minutes.
  8. Discard the vanilla bean.
  9. Meanwhile, cut 4 cups of bread (challah, brioche, or a similar bread) into quarters.
  10. In your prepared baking dish, arrange bread and apple slices in alternating layers.
  11. In a medium bowl, whisk together 2 large eggs, 1 teaspoon ground cinnamon, and ½ teaspoon ground nutmeg.
  12. Gradually whisk the warm milk mixture into the egg mixture until well combined.
  13. Carefully pour the egg mixture over the bread and apples, ensuring all pieces are moistened.
  14. Place the pudding dish in a larger baking dish.
  15. Pour enough boiling water into the larger baking dish to come halfway up the sides of the pudding dish (this creates a bain-marie).
  16. Bake uncovered for approximately 1 hour, or until the pudding is set and golden brown. A knife inserted into the center should come out clean.
