How to Make Apple Butter
- Preheat oven to 375°F (190°C).
- Core and quarter 6 pounds of peeled apples.
- In a 4-6 quart kettle, combine the apples with 1 cup of apple cider.
- Cook over medium heat for 30 minutes, or until apples are very soft, stirring occasionally.
- Carefully transfer the cooked apples to a blender or food processor and blend until smooth. (You may need to do this in batches).
- Return the blended apples to the kettle.
- Add 1 ½ cups granulated sugar, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon ground allspice, and ¼ teaspoon ground cloves.
- Bring to a gentle boil, stirring frequently to prevent sticking. Continue to cook and stir until the sugar dissolves completely.
- Reduce heat to low and simmer gently for 30-45 minutes, or until the apple butter reaches your desired thickness, stirring frequently to prevent burning.
- Remove from heat and let cool completely. Store in airtight containers in the refrigerator or freezer.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
