How to Make Apricot And Lime Chutney Relish

  1. Score the skins of 1 lb apricots and soak in a bowl of boiling water for 5 minutes.
  2. Remove apricots from water and gently peel off the skins.
  3. Remove the pits from the apricots.
  4. Chop the apricots into ½ inch pieces.
  5. Place the chopped apricots and 1 cup granulated sugar in a medium saucepan.
  6. Finely slice 1 medium red onion and add it to the saucepan.
