- 8 cups shredded green cabbage

How to Make Apple Cabbage Salad
- In a small saucepan over medium heat, whisk together 2 tablespoons of sugar, 1 teaspoon celery seed, 1/2 teaspoon salt, and 1 tablespoon Dijon mustard. Gradually whisk in 1/4 cup of water and 1/4 cup apple cider vinegar until smooth.
- In a separate small bowl, whisk together 1 tablespoon of cold water and 1 tablespoon of arrowroot powder until smooth. Gradually whisk this mixture into the saucepan with the other ingredients until the dressing thickens slightly (about 1-2 minutes).
- Remove the saucepan from the heat and let the dressing cool completely. Then, refrigerate for at least 3 hours, or preferably overnight, to allow the flavors to meld.
- Once chilled, stir in 1/4 cup plain yogurt and 2 tablespoons of your favorite mayonnaise (optional).
- In a large bowl, combine 8 cups of shredded green cabbage and 2 medium apples (cored and thinly sliced).
- Pour the chilled dressing over the cabbage and apples.
- Gently toss to coat evenly.
