Ingredients for Apple Cheddar Muffins

  • 1/2 cup (113g) shortening
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • Unbleached Flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (100g) rolled oats
  • Apple
  • Cheddar Cheese
  • 1/2 cup (60g) chopped pecans
  • 1/2 cup (120ml) milk
  • Apples
  • 2 tablespoons (30g) melted butter
  • Cinnamon Sugar Mixture

How to Make Apple Cheddar Muffins

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, cream together 1/2 cup (113g) shortening and 3/4 cup (150g) granulated sugar until light and fluffy.
  3. Beat in 2 large eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together 2 cups (250g) all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in 1 cup (100g) rolled oats, 1 cup (140g) shredded cheddar cheese, and 1/2 cup (60g) chopped pecans.
  7. Gradually add 1/2 cup (120ml) milk, mixing until the batter is just moistened.
  8. Peel and slice 1 medium apple (about 1 cup sliced).
  9. Melt 2 tablespoons (30g) butter. Dip apple slices into the melted butter, then coat with 2 tablespoons of cinnamon-sugar mixture (1 tablespoon sugar, 1/2 teaspoon cinnamon).
  10. Fill each muffin cup 2/3 full of batter. Press 1 apple slice into the top of each muffin.
  11. Sprinkle the tops with remaining cinnamon-sugar.
  12. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
