How to Make Bahama Shrimp Skewers

  1. In a large bowl or zip-top bag, combine 1/2 cup light rum, 1/4 cup lime juice (freshly squeezed is best!), 2 tablespoons brown sugar, 1 tablespoon olive oil, and 1 teaspoon ground ginger.
  2. Add 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper (adjust to taste), and salt and pepper to taste. Mix well. Taste and adjust seasonings as needed.
  3. Set aside 2 tablespoons of the marinade for basting.
  4. Add 1.5 pounds of peeled and deveined shrimp, 1 cup cubed fresh pineapple, and 1/2 cup chopped red bell pepper (or your favorite grilling vegetables) to the marinade.
  5. Marinate in the refrigerator for at least 3 hours, or preferably overnight. The longer the better!
  6. Soak wooden skewers in water for at least 30 minutes to prevent burning (metal skewers can be skipped).
  7. Thread shrimp, pineapple, and vegetables onto skewers.
  8. Preheat grill to medium-high heat.
  9. Grill skewers for 12-15 minutes, turning occasionally and basting with the reserved marinade, until shrimp are pink and cooked through.
  10. Serve immediately and enjoy your tropical escape!
