- 1 tablespoon olive oil
- Dark Rum
- 1/4 cup lime juice (freshly squeezed)

How to Make Bahama Shrimp Skewers
- In a large bowl or zip-top bag, combine 1/2 cup light rum, 1/4 cup lime juice (freshly squeezed is best!), 2 tablespoons brown sugar, 1 tablespoon olive oil, and 1 teaspoon ground ginger.
- Add 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper (adjust to taste), and salt and pepper to taste. Mix well. Taste and adjust seasonings as needed.
- Set aside 2 tablespoons of the marinade for basting.
- Add 1.5 pounds of peeled and deveined shrimp, 1 cup cubed fresh pineapple, and 1/2 cup chopped red bell pepper (or your favorite grilling vegetables) to the marinade.
- Marinate in the refrigerator for at least 3 hours, or preferably overnight. The longer the better!
- Soak wooden skewers in water for at least 30 minutes to prevent burning (metal skewers can be skipped).
- Thread shrimp, pineapple, and vegetables onto skewers.
- Preheat grill to medium-high heat.
- Grill skewers for 12-15 minutes, turning occasionally and basting with the reserved marinade, until shrimp are pink and cooked through.
