  • Dark Rum

How to Make Bahama Shrimp Skewers

  1. In a large bowl or zip-top bag, combine 1/2 cup light rum, 1/4 cup lime juice (freshly squeezed is best!), 2 tablespoons brown sugar, 1 tablespoon olive oil, and 1 teaspoon ground ginger.
  2. Add 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper (adjust to taste), and salt and pepper to taste. Mix well. Taste and adjust seasonings as needed.
  3. Set aside 2 tablespoons of the marinade for basting.
  4. Add 1.5 pounds of peeled and deveined shrimp, 1 cup cubed fresh pineapple, and 1/2 cup chopped red bell pepper (or your favorite grilling vegetables) to the marinade.
