How to Make Applebee's Garlic Mashed Potatoes Copycat

  1. Preheat oven to 400°F (200°C).
  2. Cut the top off the head of garlic to expose the cloves. Drizzle with 1 teaspoon olive oil, wrap tightly in heavy-duty aluminum foil, and roast for 45 minutes, or until cloves are soft.
  3. While the garlic roasts, wash and quarter the potatoes. Place potatoes in a large saucepan and cover with cold water. Bring to a boil over medium-high heat.
  4. Once boiling, reduce heat to medium-low and simmer for 15-20 minutes, or until potatoes are easily pierced with a fork.
  5. Drain the potatoes in a colander and return them to the saucepan.
  6. Once the roasted garlic is cool enough to handle, squeeze the softened cloves out of their skins. Add the roasted garlic to the potatoes.
  7. Add butter, warmed milk, sour cream, salt, pepper, garlic powder (if using), and parsley (if using) to the potatoes.
  8. Mash with a potato masher or electric mixer until smooth and creamy. Add more milk if needed to reach desired consistency.
  9. Serve immediately and enjoy!
