How to Make Apple Cider Pancakes
- In a large bowl, whisk together 2 cups all-purpose flour, 4 teaspoons baking powder, 1/2 cup granulated sugar, and 1 teaspoon salt.
- In a separate bowl, whisk together 2 large eggs, 1 1/2 cups apple cider, 1/4 cup vegetable oil, and 1 cup peeled and diced apples.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Heat a lightly oiled griddle or large skillet over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to appear on the surface.
