  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1 medium onion, chopped, and 1 teaspoon fresh thyme leaves. Cook until onion is softened, about 5 minutes.
  2. Remove onion mixture from skillet and set aside.
  3. Season 4 boneless, skinless chicken breasts (about 1.5 lbs total) with salt and pepper.
  4. Add chicken to the skillet and cook for 4-5 minutes per side, or until golden brown.
  5. Remove chicken from skillet and set aside.
  6. Add 1/2 cup apricot preserves, 1/4 cup balsamic vinegar, and 1/4 cup chicken broth to the skillet. Bring to a simmer, stirring until preserves are melted and the sauce slightly thickens (about 2-3 minutes).
  7. Stir in the cooked onion mixture.
  8. Return chicken to the skillet, turning to coat in the sauce.
