How to Make Apricot Balsamic Skillet Chicken
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1 medium onion, chopped, and 1 teaspoon fresh thyme leaves. Cook until onion is softened, about 5 minutes.
- Remove onion mixture from skillet and set aside.
- Season 4 boneless, skinless chicken breasts (about 1.5 lbs total) with salt and pepper.
- Add chicken to the skillet and cook for 4-5 minutes per side, or until golden brown.
- Remove chicken from skillet and set aside.
- Add 1/2 cup apricot preserves, 1/4 cup balsamic vinegar, and 1/4 cup chicken broth to the skillet. Bring to a simmer, stirring until preserves are melted and the sauce slightly thickens (about 2-3 minutes).
- Stir in the cooked onion mixture.
- Return chicken to the skillet, turning to coat in the sauce.
- Reduce heat to low, cover, and simmer for 8-10 minutes, or until chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Serve immediately over cooked rice or pasta. Garnish with fresh thyme, if desired.
